Created from our signature mash bill with 100% Tasmanian grains, triple distilled and matured for five and a half years in a European Oak, ex-Port/ Rum Quarter Cask, this release has been cut to an approachable 46%.

Silky sweet, gently spiced and deliciously fruity. 
Created from our signature mash bill with 100% Tasmanian grains, triple distilled and matured for five and a half years in a European Oak, ex-Port/ Rum Quarter Cask, this release has been cut to an approachable 46%.
Our Port/Rum casks were sourced by our friends from Transwood Cooperage who spent decades evaluating and reworking casks for the Australian rum industry. We’ve been eagerly anticipating the results, and the first in the series is of European Oak originally filled with Portuguese Port which was later used to mature limited- release rum. The cask influence is striking, producing a unique Hunter Island Whisky which balances plummy port influences with tropical hints of sweet and sour.

Tasting notes

Nose: A vibrant, sweet nose of orange, cocoa and nutty kitchen spice.
Palate: Fresh plums, sultanas, and hints of pineapple and vanilla. The mouth feel is silky and buttery. Confectionary notes of toffee apple, choc orange and sour worms mix with herby sage and walnut.
Finish: Medium to long finish; gently spiced and warming.
