Our Whisky

Hunter Island Whisky has been created from a mixed mash bill, has been triple distilled in copper pot stills, and aged in hand-selected oak casks. 

Single pot still whiskey is a centuries-old Irish creation, and today, it’s on the way to reclaiming its place as the world’s most-loved brown spirit. 

Hunter Island Tasmanian Pot Still Whisky is our Tasmanian interpretation of Ireland’s signature dram, and an opportunity to showcase Tasmania’s excellent ingredients.

THREE GRAINS

MALTED BARLEY | OATS | UNMALTED BARLEY

‘More than anything, it’s the grains we’re using which set us apart from other whiskies being made on this island. Tasmanian barley is world-class and we’re using both malted and unmalted. The new make spirit is sweet and creamy, a little bit spicy… and chewy, thanks to the addition of some oats in the mash.’

After years of making single malt whiskies, we quickly discovered that making wash from a mixed mash bill is challenging. Our brewing takes place offsite (although this will change). We’ve worked closely with the team @whitelabeldistillery, and   arrived at a mashing regime which extracts a good alcohol yield and maximum flavour from our home-grown grains.

COPPER


Our locally-made copper pot still represents the heart of our distillery.

Three new stills by @stillsmiths are planned.
We’ve thought carefully about the size and shape of each still; these things have a big impact on the final product. 

WOOD


We know about the importance of casks in whisky production, and our barrels are all hand-selected and expertly coopered by the team at @transwoodcooperage. When the new make spirit goes into the casks, the magic happens. We’re constantly testing, tasting and experimenting with finishes and marriages. We’re patient people, and the whisky is ready for bottling only when it’s ready.

 

 


THREE DISTILLATIONS

WASH | INTERMEDIATE | SPIRIT

‘ We chose to make something a bit different, and it starts with our mixed mash bill of malted barley, unmalted barley and oats. That’s the beauty of this style of whisky; when you have permission to vary the grain bill, the possibilities are endless.’

‘In whisky-making, there are key moments in the production where flavour is created. We’ve been able to drill deep into the processes of fermentation, distillation and maturation so as to achieve the right profile and quality.’

 

 

The word ‘single’ denotes that whisky has been produced at a single distillery. We’re looking forward to the day when the mashing, fermenting and distilling of our liquid are undertaken at our new distillery on the waterfront. Only then will we add ‘single’ to our brand.

Whiskey or Whisky? The traditional Irish spelling contains an ‘e’, but we’re spelling it ‘whisky’ as per the consensus of Tasmania’s distilling community. We make Tasmanian Whisky, not Irish Whiskey.
