Description
Maturation is a complex and mystifying process, and some aspects we simply cannot control. In our experiment we explore the impact of two variables which we can manipulate: wood grain and heat treatment. Four casks- same origin, shape and size- were filled with our new-make spirit, and aged side by side in our bondstore for the same time period.
Now decanted, cut back, bottled and tasted, the results are in, and we’re struck by the variations in texture, aroma, colour and flavour. How has each cask impacted on our whisky? And which of the four whiskies is best?

Each Experimental Series box-set contains four x 200ml bottles of Hunter Island Tasmanian Pot Still Whisky (one from each of the four casks), all cut to 48% ABV, and an information pamphlet explaining more about maturation in Tasmania and this experiment.
